With the new update Blizzard made the UI even more confusing than in the first version of the game, so don't blame yourself if you couldn't find the option to change hero settings in Overwatch 2. Here is the guide on how to do it.
First, head to your main screen and hit "Esc" to bring out the menu. Then click on the "Options" button, as shown below.

Now you should be greeted with the "Video" tab of the setting. Click on the "Controls" tab which will redirect you to the right place.

When in the "Controls" tab, search for the orange button called "Change Hero" located to the right of the screen, as shown in the following screenshot.

The hero selection screen should appear where you can choose the hero you want. For this example, I chose Baptiste, as shown below.

Here you can see that the icon on the right changed from "All Heroes" to the hero I've chosen. Now feel free to change things like sensitivity, crosshairs and other special options related to specific heroes. The changes you make will only affect the hero you've previously chosen and will overwrite the global settings.

Should You Change Hero Settings in Overwatch 2? The Pros and Cons
The Advantages

There are a lot of advantages to adjusting every hero's settings separately and I highly recommend using this feature on a daily basis. You have to set it only one time and never think about it, so it's a no-brainer.
Firstly, the ability to set different sensitivity on a specific champion. You might want the higher sensitivity on mele champions to turn around quicker and lower on snipers like Anna or Widowmaker to be more precise.
There are also some features reserved for only a couple of heroes which cannot be changed in global settings. One of them is "Recoil Recovery Aim Compensation" which can be found on Baptiste's menu.
The last thing that I could think of is changing your crosshair to match different heroes. The reasoning is the same as with sensitivity.
The Disadvantages

There are actually no disadvantages to using this feature. If I had to think of one, there are always sensitivity variations between the heroes, as they might mess up your muscle memory. In a long run, it is a minor thing, as Overwatch 2 does not require, as much precision as for example, CSGO and other tactical shooters.
